After several bowls of pork and/or shoyu based ramen halfway through my 2019 Japan trip, time to try one with a different type of broth.

Enter Ramen style Junk Story, which they are famous for their shio and chicken based ramen called Shio no Kirameki.

Shio no Kirameki - Luxury Set (¥1300 - ¥50)

First off, why the -¥50 you might be thinking? Cause we opted for lesser noodles. There are 3 options for the noodles’ amount for their main ramens, Small, Standard, and Large at -¥50, +-¥0, and +¥150 respectively. I feel this is a great implementation, as I am not particularly hungry on carbs that night (or in general), but more on exploring different ramen restaurants around Japan.

The Luxury Set is an additional ¥350 compared to the basic Shio no Kirameki, and with that, it comes with an additional 2 pieces of chicken and pork each, plus 1 egg.

Broth: Shio and chicken stock for this clear broth with a touch of chicken oil, definitely on the lighter profile but that doesn't mean they lose out on the flavours. The broth has a good balance of subtle sweetness and salty meaty umami taste, it feels quite refined on this part. Great for people who want to let their stomach rest after one too many on those thick tonkotsu broth ramen, or just want a lighter profile ramen that day.

Chashu: 2 pieces of chicken and 2 pieces of pork, both slightly undercooked. This part we have to be more adventurous and open-minded plus a bit of trust, to be very honest the meat taste delicious, quite tender and juicy. I believe the chicken might be seared on the outside, pork looks like it has been smoked a bit (like ham).

They are not “Junk Ramen” style, but is “Ramen Style” junk, thus I believe they are doing things in a unique and creative way but yet still taste great, refined, and presentable on the overall.

Egg: Good ratio of runny yolk, has a deep orange colour yolk and is thicker/creamier. Actually, it is my first time to see runny yolk but is thicker/creamier type.

Noodle: Standard medium-thin thickness noodles.

Overall: Interesting and creative (lighter profile) twist for both the broth and the meat, I do say I kind of like what they are doing here for an unconventional ramen style.

Overall

Although not in the center in any of the standard touristy spots, but it is close enough. Located a few minutes walk away from Tanimachi 9-chome Station, this station for distance gauge is about 2 train stations away from Namba Station.

Menu is in Japanese only, but you could probably:

  1. Show them the photos from my post

  2. Just tell them Shio no Kirameki and specify the standard or luxury set

  3. Or point at the menu, according to the prices which you can figure out based on my post

Another ramen place I will recommend if you are open to shio and chicken broth, and also the undercooked meat part.
