This ramen shop has superb location (opposite Nagano JR station), long opening hours (11am-1am), and opens daily! Shortlisted into my to-eat list for this trip purely based on its location and opening hours, cause not much food stalls open that late into the night outside of the main cities in Japan.

Most importantly, how does this bowl of ramen fares?

Spicy Miso Chashumen - Nagano millstone wheat noodles (¥1020)

To be very honest, I wasn’t expecting much going eating this because I didn’t see much reviews and the Tabelog score for this was around 3.55-3.6 which is slightly above average IMO, I gauge anything >=3.8 as great.

Boy, I am so pleasantly surprised by how good this bowl of ramen is. Let’s go right to the tasting!

Broth: Just about right spicy for me (might be slightly too spicy for mild spicy eaters), balance taste between the spice and miso (saltiness), also in the middle of the spectrum for thick/watery of the broth.

Chashu: Smaller size and slightly different shape (quite round) from mainstream ramen stores. The meat is tender and has a slight melt in your mouth feeling, this cut of the meat also has a bit more fatty ratio which contributes to a more shiok feeling when eating it.

Noodle: Of course in Nagano, we had to try their local produced millstone wheat noodles!

  • Taste: Robust, earthy and nutty with a tinge of sweetness

Overall it is a non-pretentious, traditional, and safe bowl of ramen. No real flaws that I could think of, but also nothing that really stands out except maybe for the unique taste of the Nagano millstone wheat noodles.

This bowl of ramen will be cover by my wife, as she ate this bowl and I only tasted a spoonful of broth and noodle. But the chashu and noodles are the same type as my bowl.

Broth: Clean and well balanced (saltiness), also in the middle of the spectrum for thick/watery of the broth.

Overall it is well balanced, easy to eat, every factor in the ramen feels like in the middle of the spectrum so that it can fit almost everyone’s tastebud.

It’s like summary above, it is a non-pretentious, traditional, and safe bowl of ramen. Well balanced, easy to eat, every factor in the ramen feels like in the middle of the spectrum so that it can fit almost everyone’s tastebud.

But if you also consider the external factors of superb location and opening hours, this should solve your trouble of finding a good meal at any time (other than breakfast) in Nagano.

Will we go back to this ramen shop if we are in Nagano? A definite yes.
