Dandan Noodles (Level 4 spice) + Soft Boiled Egg (¥580 + ¥50)

Firstly, you have to pre-purchase your order from the ticketing machine near the entrance.

I went straight for the level 4 spiciness and also an additional side order of soft boiled egg. In Japan, we never fail to addon an additional egg for our meals, it is almost a must-have every time!

Taste: The sauce, spices (sansho pepper), and ingredients (minced meat, egg, and spring onion) combined to give almost all the basic taste profile of sweet, sour, salty, spicy, and inclusion of numbing effect and fragrance aroma. At level 4 spiciness, it is packing quite a punch of spice even for me as a spice lover too. So for those who can’t handle spice that well, do consider having a lower level of spiciness.

Texture: Thin chewy noodles, slight crunch from the spring onion, and soft meaty bite from the minced meat.

Overall it a simple and flavourful dish, but I feel the ingredients could be much more, as we are left wishing for more meat and spring onion after the meal.

I actually went to google for more reviews for this restaurant, and I saw that Kunimax might be something I am looking for. Max spice, max negi (spring onion), and no, there is no max meat haha!

There is also another dish called Deathmax, which is max spice, max negi, and max red capsicum!

You really need to see the photos at a Japanese reviewer blog posts over here (Kunimax) and here (Deathmax) to visualise the “max” part.

If I am visiting Hiroshima again in future, I will definitely try both the Kunimax and Deathmax with my wife next time!
